Yeasted Bread
This range of bread is made with manufactured yeast but our recipes use a fraction of the yeast
that modern industrial produces would use. By modern standards, all our bread is long fermented, it is allowed to prove
for a minimum of two hours and the 'Long Fermentation' dough ferments for up to twenty-four hours.

Sourdough Bread
This is all the bread, which is leavened with a Sourdough culture. We regularly make eight
different kinds. We have two cultures: a wheat Sourdough which is 7 years old and a rye culture which is 8 years old.
After mixing the bread dough and moulding them into loaves, the latter then rest in linen "couches" and are allowed to
prove for a minimum of two hours before being baked. Meanwhile the cultures need feeding in order to be ready for use
the next day.

Croissant & brioche
Our croissants and brioche are baked everyday. They are made from unbleached organic white wheat
flour, organic butter, sugar, salt, wheat sourdough culture and yeast and are hand rolled or moulded. They are a treat
for a special breakfast or tea.

Sweet Patisserie
Our sweet short crust pastry and our puff pastry are only ever made with organic butter and flour.
We do not ever use any other kind of fat. We use lots of fruit from our own garden and when that runs out, we source other
locally grown produce. As well as pastries, brownies and bread pudding are favourites.

Savoury Patisserie
Our savoury short crust pastry and our puff pastry are only ever made with organic butter and
flour. We do not ever use any other kind of fat. For some savouries, we use a bread dough base.

Cakes and Special Orders
We sell a range of traditional English cakes, made entirely from organic ingredients including whole eggs (not the frozen
ones that most caterers use). The cakes are baked in tins (of approximately 400g), later they are wrapped in cellophane and
they keep well for a couple of weeks, or even a month.
We are always delighted to make a special cake for a celebration: perhaps a 'Victoria Sponge', a
'Genoise', Cheese Cake, or a 'Buche de Noel'. Birthday cakes can be specially decorated. We also make large tarts sweet
or savoury, so long as we have sufficient notice.

Jams, Chutney, Museli etc.
We make jam, jelly and chutney using our own fruit wherever possible. Our Muesli has a lovely toasted flavour due to our method
of toasting the grains, nuts and seeds in the wood fired oven before mixing them with the chopped dried fruit.
